Chicken piccata at Stella

Working in the culinary industry for so many years, I've been able to experiment with a plethora of ingredients and styles of cooking, as executive chef at Stella Neighborhood Trattoria and Osteria 832. I often find it hard to pick a favorite. Sometimes the classics can be exciting and awaken your taste buds like one of my personal favorites, chicken piccata. This dish is full of flavor and a classic, yet surprisingly light. I prefer to use a pinot grigio, which adds just that little bit of zing, blending perfectly with the zest of the capers. This simple plate, warm and flavorful, is perfect for any occasion.
This delightful meal is organic, fresh and sure to satisfy your hunger. When the butter is blended with the pinot grigio, this combination creates a light and but mouth-watering taste. I also prefer to use free-range organic chicken in this and many other dishes for its health benefits, tender white meat and exceptional flavor.
Creating a flavorful meal begins with exceptional ingredients. When using this recipe, be sure to use a quality pinot grigio or one that you enjoy drinking, and a good quality butter, as it adds a distinct essence to the final dish. For enhanced authenticity, use the highest-quality capers you can get your hands on. Although they are not always accessible, I have found that capers from Sicily produce the best result in this dish. Finally, for that finishing touch, top everything with garden-fresh parsley, adding a very crisp and clean spice without masking the rest of the ingredients.
I love making this item because it emanates an innovative, delicious flavor and yet is simple enough for everyone to make. Chicken piccata is a great addition to our menu at Stella. CHICKEN PICCATA
Serves one
Ingredients:
- 2 cups flour
- 1 teaspoon white pepper
- 1 teaspoon kosher salt
- 6 ounces chicken or veal
- 1 teaspoon extra virgin olive oil
- 1 ounces butter
- 4 ounces white wine
- 1 tablespoon capers
- 1 ½ teaspoons parsley
Instructions
Combine and mix flour, salt and white pepper to create dusting flour. Dust chicken or veal filets in flour. Heat sauté pan and add EVOO. Add protein filets and cook on each side for 1 minute. Add butter and white wine to sauté pan and cook until sauce is creamy (approximately 30 to 45 seconds). Add capers and parsley and fold into sauce. When plating dish, center capers on top of protein. Garnish with parsley.
